Here is the recipe:
1 large egg
1/2 cup packed light brown sugar
1/3 cup (or less) liquid coconut oil or canola
1/4 cup sugar
1/4 cup sour cream or yogurt
2 tsps vanilla extract
2 tsps cinnamon 1/2 tsp nutmeg
Add & Stir Until Combined:
1 cup flour 1/2 tsp baking powder
1/2 tsp baking soda
FOLD IN: 1 cup grated carrots & 1 cup grated apple
Put batter in oiled & floured loaf pan (app. 9″ x 4″) BAKE in pre-heated 350F oven for 45 to 50 min. Let cool 15 min. in pan, then remove to metal rack to finish cooling ENJOY!!
