As an Earl Grey fanatic, I could never find the perfect Earl Grey, even though we sold some great ones.   So….we finally decided to blend our own.  And it is the best ever. Soooo fragrant, so delicious.   Just the perfect blend of essential bergamot oil and black tea. When I find recipes that use Earl Grey, that’s exciting!

Here’s the recipe for the shortbread cookies with our tea right in them and they are yummy!  The recipe is a variation of recipes by sugarandsoul.com and Dine & Dish.   If you don’t use the right tea, however, your results won’t be as good as they can be using loose leaf Earl Grey with incredible fragrance.

INGREDIENTS:

1/2 cup butter at room temp

1.5 TBS+- to strength preference Earl Grey Premium http://bit.ly/2NCCuee loose tea, ground (in coffee grinder or rolled/crushed with rolling pin inside plastic bag)

1/4 cup powdered sugar

1 cup flour 1/4 tsp salt

Glaze:    1/2 cup powdered sugar blended with 1/2 TBS lemon or orange juice

DIRECTIONS:

Let butter sit out until at room temp and then combine with tea.   Let sit another 2 hours to infuse flavor into butter

Add powdered sugar to butter/tea mixture and mix/cream together

Add flour and salt and mix (will be crumbly but form into soft ball)

Roll out dough to 1/4 inch thick Cut dough into 2″ round cookies with floured cutter

Put in preheated 350F oven for 12-14 min.

Glaze after cookies have cooled.

MAKES 8 COOKIES.   If more are desired, increase ingredients to desired volume
